Job Description
 
Summary:
Phase 1: Proof of principle: 6 - 12 mo.>>>>
• Develop operational expertise with create procedures for beverage analysis
• Leverage model beverage systems to assess feasibility
• Construct and test model mouths to assess impact of oral processing on volatile release from beverage systems

Phase 2:
• Assess benefits and limitations of
• Identify external partners with expertise – instrumentation to partner with to test different technologies
• Establish research objectives, test protocols, and contracts to initiate external partnerships

Phase 3: Develop techniques to enable measurement of release from food systems: 9 – 24 mo.
• System design: adapt current texture analysis instrumentation to enable volatile sampling from texture analysis instrumentation and or tribometer
• Create internal procedures to assess food systems
• This role requires someone with strong skills in flavor chemistry, food chemistry, and / or analytical chemistry.
• The candidate must have a strong understanding of both mass spectrometry and techniques for isolation of volatile compounds from beverages and foods.
• A Ph.D or MS. in Flavor Chemistry is ideal. Candidates with a Ph.D. or MS in Food, Organic, or Analytical chemistry might also be suitable.
